Summer Fruit Crumble

with Tipu's Chai

In the summer when fresh fruit is everywhere, what can be better than a hot spiced crumble?  Known by many names – crumble, brown better, cobbler – you can use whatever fruit happens to come your way.

You might not think that of chai in combination with fruit but if you think of apple pie spices, you will have a list of a number of the spices in Tipu’s Chai.  The gentle heat of the ginger and cinnamon are perfect to bring out the flavors of fresh summer berries and other fruit.  So give it a try and see if it isn’t heavenly!

Summer Fruit Crumble with Tipu's Chai

Ingredients

For the fruit:

  • 5 cups of fruit (if fresh, store in the refrigerator for 24-48 hours to bring out the sweetness) for example
    • 6 apricots
    • 4 nectarines or peaches
    • 15 Flathead Lake sweet cherries
    • 1 cup of homegrown raspberries(Also good choices are plums, blueberries, huckleberries, apples, pears)
  • 1 Tablespoon grated fresh ginger (optional)
  • splash of lemon juice, depending on tartness of fruit
  • 1/2 cup brown sugar
  • 1/2 tsp Tipu’s Chai Now®- Unsweetened Chai Tea
  • 1/2 Tablespoon cornstarch if the fruit is juicy

For the Topping:

  • 1/2 cup unsalted butter
  • 1 cup whole or quick oats
  • 3/4 cup ground nuts (almonds, pecans or walnuts)
  • 1/4 tsp salt (unless the nuts are salted)

Instructions

Pit all the fruit, slice (you can leave the skins on) and combine in a large bowl. Add a splash of lemon juice, brown sugar and Tipu’s Chai Now-Unsweetened Chai Tea. If the fruit is extremely juicy, add cornstarch. Stir well to coat. Turn into your baking dish, leaving at least ½ inch of space for the crumble.

Melt butter in a saucepan. Add oats and nuts. If the nuts are not salted, add ¼ teaspoon of salt. Stir well until oats and nuts are coated in butter. Layer crumble on top of fruit.

Bake 45 minutes to an hour at 350 degrees until the fruit is bubbly and the crumble starts to brown. Serve ala mode with vanilla ice cream.

(For an extra special occasion, toss some mini chocolate chips on top of the crumble so they melt in.)
